04 Jan Sweet Potato Chips
So, after reading about K.Rock’s experience with her new mandolin slicer, over at Food Stamp, I pretty much HAD to go ahead and grab one. I had been thinking about it for a while, so I felt good about getting. Suze Orman says you should think about whether or not you’ll regret the purchase later, and I can comfortably say that I do not, and doubt I ever will. Until I (inevitably) cut myself on the thing. Then I will hate it.
Anyway though, I saw these sweet potatoes on sale for 1.50 for the whole bag when I went grocery shopping this morning, so I had to have them! I figured that paired with my new mandolin, they would make nice chips!
So, I cut them up, using the thinnest blade
spread them out on paper towels to dry;
Spread them on an oiled cookie sheet, and sprinkled with cinnamon and nutmeg. I baked them for about 10 minutes (at 425) and then turned them over, so that both sides could get crisp. Once they start to brown, watch them carefully, or….
You’ll end up with some burnt ones;
But some turned out well, and they were a very nice snack! These tasted great, and I will definitely make them again, but i’ll pay more attention this time, so they don’t burn!
