Sweet Potato Chips

So, after reading about K.Rock’s experience with her new mandolin slicer, over at Food Stamp, I pretty much HAD to go ahead and grab one.  I had been thinking about it for a while, so I felt good about getting.  Suze Orman says you should think about whether or not you’ll regret the purchase later, and I can comfortably say that I do not, and doubt I ever will.   Until I (inevitably) cut myself on the thing.  Then I will hate it.

Anyway though, I saw these sweet potatoes on sale for 1.50 for the whole bag when I went grocery shopping this morning, so I had to have them!  I figured that paired with my new mandolin, they would make nice chips!

So, I cut them up, using the thinnest blade

Soaked them in cold water, to draw out the starch, (preheat oven to 425 while potatoes are soaking)  and then rinsed and rinsed until the water ran clear;

spread them out on paper towels to dry;

Spread them on an oiled cookie sheet, and sprinkled with cinnamon and nutmeg.  I baked them for about 10 minutes (at 425) and then turned them over, so that both sides could get crisp.  Once they start to brown, watch them carefully, or….

You’ll end up with some burnt ones;

But some turned out well, and they were a very nice snack!  These tasted great, and I will definitely make them again, but i’ll pay more attention this time, so they don’t burn!

    Yay!! So glad you got inspired!! I am dreading the day that I cut myself with mine because with my luck, I know it’s coming. The sweet potato chips are a great idea. I will definitely be making these because I love all things sweet potato. Yay Christina!

    Glad I dropped by! Funny you should mention sweet potatoes because I’ve been looking for a way to add them to my diet. This weekend, I tried sweet potato pie for the first time and it was DELICIOUS!!! I didn’t think anything orange could taste so good!

    Yum!! I’m gonna have to try those. I buy the packaged ones from Utz, but would love to make them at home.

    oooh looks yummy! i have a mandolin that’s been sitting in my cabinet for months and i’ll think i’ll break it out to make these chips. thanks for posting!
