Chicken w/Snowpeas

Another quick post, sorry!  I know i’ve been posting nothing but food lately, but food is the only thing that has been going on besides work!  Sorry for the kinda crappy picture too, lol. Anyway, you may notice that in the picture there is pineapple in the dish, but not in the recipe.  This is because the pineapple was kind of weird in the context of everything else in the dish.  Not bad, just weird, so I removed it from the recipe!

    *Snow Peas (Sugar Snap Peas) 1 cup
    * Broccoli, 1 cup
    * Onions,1 cup
    * Green Peppers, 1 cup
    * Cornstarch, 2tbsp
    * Water, 1/4 cup
    * Garlic Powder 1 tsp
    * *Ginger Powder, 1 tsp
    * Brown Sugar, .1/4 cup
    * 1/2 cup of Rice
    * *Oyster Sauce, 3 tbsp
    * *Soy Sauce, 3 tbsp
    *Rice Vinegar, 3 tbsp
    * Chicken Breast, no skin,1.5 lbs
    * Sesame Oil, 2 tbsp


Rinse chicken well, and cut into thin slices (.25″)

Chop onions and bell pepper into large chunks (1″)

If frozen, remove snow peas and broccoli from freezer, set aside.

Mix together cornstarch, water, rice vinegar, soy sauce, oyster sauce, and brown sugar. Set aside.

Put rice on to boil.

In a skillet large enough to hold all ingredients, sautee chicken in sesame oil until outsides are no longer pink.

Add all veggies to the chicken, (add any frozen veggies first) and sautee until frozen veggies have thawed, and bell pepper has begun to soften.

Reduce heat, and pour soy sauce mixture over veggies (you may want to stir it again first, to make sure everyhting is mixed well.)

Allow to simmer for about 5-10 minutes, or until sauce begins to thicken.

Stir in Rice, serve and enjoy!

This makes me hungry. LOL. I love that your recipes are so easy to follow. I’m new to cooking so the simplier, the better. LOL.
